The milk production show large economical expression, and is one the big ones generating of job. The small dairy properties have difficulties of establish, front the demands imposed by market. The search the quality in productive of the milk in Brazil has been generate debates, Instruction Normative nº 51 of the Ministry of the Agriculture, Livestock and Provisioning, instituted technical regulations, fixing conditions and minimum requirements the hygiene and sanitary for obtaining and production the raw material. With this work it was analyze the aspect hygienic sanitary in obtaining of the milk at Alegre settlement, Araguaína Municipality, State Tocantins, it was seen the milk produced follow the patterns the Instruction Normative nº .51. The used data are of primary nature, obtained through direct interviews the 41 rural producers, accomplished in March of 2007. In agreement with the obtained results, it was verified that the norms of the IN nº51 weren’t being respected in relation to the employed management in the milking, the udder preparation of the milker and of the utensils, however, it leaves of the produced milk was given in the dairy products inside of the established periods for the legislation; and that the obtaining of the milk needs to be gotten better so that she can adapt to the demands of the IN nº. 51.KEY WORDS: Instruction Normative nº. 51, quality of the milk, sanitary management.
