STUNNING OF BEEF CATTLE SLAUGHTERED IN THE PANTANAL OF MATO GROSSO DO SUL STATE AND OCCURRENCE OF CARCASS BRUISING

This study aimed to assess the efficiency of stunning of beef cattle slaughtered in the Pantanal of Mato Grosso do Sul state and the influence of road and fluvial transport on carcass bruising, the quantification of bruises on the right and left half carcasses and the forequarter and the hindquarter, as well as the size of bruises. The cattle slaughtered on the same day and the older cattle had the highest number of shots. From a total of 106 carcasses assessed, 87 (82.0%) had one or more bruises, totaling 136 bruises, which resulted in the removal of 60.133 kg meat, with a general mean of 0.567 kg by animal or 0.691 kg by animal, considering only the animals that had bruises. There was a significant difference in terms of frequency of carcass bruising among the treatments. The right half carcasses of all animals in all treatments had the highest proportions of bruising incidence. There was no significant difference in the means of size of bruises among the treatments. The lack of maintenance of the pneumatic powered stunner caused the highest number of shots.Key words: Carcass bruising, pneumatic powered stunner.
