Ciência, Higiene e Tecnologia da Carne
Abstract
Os quatro autores são médicos veterinários, fiscais federais agropecuários do Departamento de Inspeção de Produtos de Origem Animal (Dipoa) do Ministério da Agricultura Pecuária e Abastecimento e docentes do Departamento de Tecnologia de Alimentos da Faculdade de Veterinária da Universidade Federal Fluminense. São, portanto, profissionais experientes e qualificados para escrever uma obra que aborda tema tão importante e carente de literatura nacional. O professor Miguel Cione Pardi nasceu em 17 de fevereiro de 1912, na cidade de Monte Azul Paulista, em São Paulo, filho de imigrantes italianos. Viveu modestamente, sem vaidade pessoal e faleceu em 9 de julho de 2004 em Niterói. Deixou inúmeros amigos e admiradores de sua inflexível linha de conduta ética e profissional. O professor Pardi, como era conhecido, indubitavelmente tornouse um ícone da medicina veterinária brasileira, revolucionou a inspeção sanitária animal brasileira, a tecnologia e a indústria de carnes no Brasil. Professor titular e emérito da UFF deixou várias obras, fez escola da qual emergiram profissionais da mais alta qualificação. Prestou serviços de grande envergadura ao País. (Continua...)
