Microbiological quality of the regional chicken pie commercialized in a fair in Goiânia, Brazil and antimicrobial susceptibility of isolated strains

Abstract

The purpose of this study was to verify the microbiological quality of chicken pies
commercialized in a fair in the city of Goiânia, Brazil, and to carry out the test of
antimicrobial susceptibility of isolated microorganisms. From 24 different tents,
144 chicken pies samples were collected. The samples were analyzed according
to Brazilian legislation including the counting of thermotolerant coliforms,
Escherichia coli, coagulase positive Staphylococcus, Bacillus cereus, sulfite
reducing Clostridium and the research of Salmonella sp. Forty-one (28.5 %) of
the samples presented thermotolerant coliforms contamination, 22 (15.3 %) were
positive for E. coli and nine (6.2%) for coagulase positive Staphylococcus. All
of the samples were negative for B. cereus, C. perfringens and Salmonella sp.
contamination. The strains were submitted to antimicrobial susceptibility test. The
S. aureus isolates showed greater resistance for penicillin (88.9 %). The strains
were grouped in five phenotypic profiles (A-E), suggesting different sources of
contamination. The E. coli strains tested, showed greater resistance to tetracycline
(41.0 %) and cephalothin (41.0 %). The E. coli strains were grouped in seven
phenotypic profiles (A-G). The results evidenced the poor microbiological quality
of the chicken pies commercialized in those conditions, signaling for the potential
risk of foodborne diseases. Educative works with food handlers with the aim to
minimize the identified errors and, consequently, to promote the protection of the
consumers’ health are recommended.
